This savory sauce tastes like a bolognese sauce but has no meat. Full of thick, chunky and fabulous flavor, you may be surprised to find that eggplant will become a new favorite! There are so many different uses for this flavorful sauce:
- Try it tossed with pasta, and also for toppings for pizza or foccacia.
- Cook down by 1/3 and serve as an accompaniment with steaks, chicken and pork.
- Dynamite on beef or turkey meat loaf.
- Spread on sandwiches mixed with a little mayonnaise.
- For any easy appetizer, take a baguette, slice in half horizontally and place desired amount of savory tomato sauce on each side. Top with feta, goat, white or regular cheddar or even mozzarella. Place under the broiler for a few minutes until cheese melts. Remove and cool for a minute and then slice and serve. Fabulous!
