Baked Pasta Puttanesca
There is room for a lot of variation in this dish. Try using ground turkey seasoned with our Poultry Herb Rub. Any ground or diced meat will work, or add more grilled or roasted vegetables in place of the meat for a vegetarian version.
Preheat oven to 350º.
Mix the Parmesan and mozzarella in a bowl.
In a well-greased 13"x9" inch baking dish, add a thin layer of the puttanesca sauce.
Build the dish in thin layers in the following order: 1/2 of the pasta, 1/2 of the meat, 1/2 the cheese, the vegetables, layer of sauce, 1/2 the pasta, 1/2 the meat, layer of sauce, 1/2 the cheese.
Cover dish with foil and bake for 20 minutes. Let stand for 20-30 minutes before serving.
This dish can be made ahead of time and kept in the refrigerator (cover with plastic wrap): it's a great one dish meal paired with a nice salad. Garnish with fresh herbs or cooked spinach.
