Apple Chipotle Sweet Potato Purée

What a great combination of ingredients—a little spice, a little sweet, and a little earthiness makes for a fabulous side dish. Of course Thanksgiving turkey comes to mind as an accompaniment, but also think roast pork, chicken or beef and even a pot of black beans with a side of tortillas for a little south of the border flair.

Ingredients:

  • 2-3 sweet potatoes (2 pounds), peeled and cut into 2" cubes
  • 3 tbsp. butter
  • 2 tbsp. brown sugar
  • 1/2 c Made in Napa Valley Apple Chipotle Finishing Sauce (or substitute 1/4 c of Made in Napa Valley Spicy Apple Mustard)
  • salt (kosher) to taste

Bring a large pot of lightly salted water to a boil over high heat.

Add the sweet potatoes and cook until tender, about 10 minutes.

Drain the potatoes, return to the pan over low heat, shaking a few times to remove the moisture, 10-15 seconds. Place the potatoes in the bowl of an electric mixer fitted with the paddle attachment and add the butter, brown sugar, Apple Chipotle Finishing Sauce and salt, and beat until smooth.

Serve immediately or keep warm by placing mixing bowl over a pot of barely simmering water.
