Apple Chipotle-Glazed Pork Chops & Rustic ApplesaucePork ("the other white meat"), when paired with apples, is a match made in heaven (hog heaven that is). The key ingredient is the smoky, sweet glaze brushed on the chops as they are pulled off the grill. As if that weren't enough, the same smoky, sweet flavor of the Apple Chipotle Finishing Sauce adds another dimension to a side dish of rustic applesauce. Ingredients:
Light grill In a small bowl, combine the Pork & Lamb Rub and the olive oil to form a paste. Rub the pork chops on both sides with the paste and set aside until 10 minutes prior to serving. Depending on the heat of the grill and thickness of chops, it will take 4-5 minutes per side. Brush each side with the Apple Chipotle Finishing Sauce as you remove them from the grill. Check for doneness by making a small cut in the center of the chop, which should be barely pink. Heat the remaining oil in a large skillet over medium-high heat. Add onions, a couple of pinches of salt and grindings of black pepper, cover and cook until they begin to soften, about 5 minutes. Add apples, wine and sage and cook about 3 minutes, stirring frequently. The apples will soften and may break apart; that is OK, as this is a rustic preparation. Add the Apple Chipotle Finishing Sauce; stir to combine ingredients and cook another 1-2 minutes. Serve with the pork chops, topped with a sprig of sage. Note: If broiling in the oven, place the chops on a foil-lined baking sheet and follow the same instructions for grilling. |
