Balsamic Pork Tenderloin with CherriesA recipe from the Good Housekeeping magazine test kitchen. Ingredients:
Cut pork tenderloin into ¾-inch thick rounds; flatten each slightly. Season with salt and pepper.
In a 2-cup glass measure, combine water and cherries; microwave on high 2 minutes. Let stand.
Heat oil in a nonstick skillet over medium heat. Add pork in a single layer. Sprinkle chopped onion around pork; cook 5 minutes. Turn pork; stir onions; cook 5 minutes or until pork is barely pink. Transfer pork to plate, cover with foil. Add drained cherries, BBQ Glaze and orange peel to skillet; heat to boiling; boil 1 – 2 minutes until sauce is slightly syrupy. Serve pork with sauce. Serves 4. |
