Tomato Mango Salad
Colorful and refreshing this salad makes a wonderful side to grilled fish or chicken. Keyri in our accounting department likes to change it every time she makes it by using a different flavored oil.
Ingredients:
- 1 large tomato, diced
- 1 large ripe mango, diced
- ½ cucumber, diced
- ½ small head of green cabbage, chopped
- 2 tbsp. fresh cilantro leaves, chopped finely
- 1/3 cup of red onion, diced
- Drizzle of any Made In Napa Valley Dipping Oil or Vineyard Pantry flavored oil
- Salt & Pepper to taste
This recipe can be made the night before. In a medium bowl toss together the diced tomato, mango, cucumber, cabbage, cilantro and red onion; sprinkle with salt & pepper to taste and add a drizzle of your favorite dipping or flavored oil. Serves 4-6.
