Chilled Ginger Soy Asian Noodles

Cold Asian noodles are definitely increasing in popularity and are a great side dish with fish, chicken, or pork. To make a one-dish entrée, simply add some chicken, shrimp, or tofu.

Ingredients:

  • 1 pound udon noodles or fettuccine
  • 1 cup Shanghai Tangerine Sesame Marinade & Dipping Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup hot water
  • 2 cups fresh sugar snap peas
  • 1 cup chopped green onions (white and green parts)
  • 1/2 cup chopped cilantro (optional)
  • 1/2 cup chopped peanuts (optional)

Cook the noodles according to package directions and drain. In a large bowl, whisk together the Shanghai Marinade, peanut butter and hot water. Add the cooked noodles, snap peas, and green onions. Toss, coating the noodles evenly with the Dressing. Garnish with the cilantro and peanuts and serve at room temperature or cold.
