White Bean and Wild Rice Salad

Beans and rice are not only a hearty combination, but a healthy one! This would be delicious with roast turkey or chicken, or could stand alone for a great lunch.

Ingredients:

  • 2 cups chicken stock
  • 1 cup wild rice
  • 1/2 cup + 3 tablespoons Wine Country Simmer Sauce
  • 1 15-ounce can navy or other white bean, drained and rinsed
  • 1/2 cup almonds, toasted
  • 3 green onions, white and green parts sliced
  • 2 teaspoons red wine vinegar

Combine chicken stock, rice and 3 tablespoons simmer sauce in a sauce pan. Cook 20 minutes, or until rice is al dente. Allow rice to cool and combine with remaining ingredients. Serve at room temperature.
