Mole Rice Salad
A hearty salad that is both delicious and good for you; it is sure to become a favorite in your house. The variety of colors and textures are sure to delight the senses.
Ingredients:
- 1 1/2 cups wild or white rice
- 2 1/4 cups chicken stock
- 1cup + 2 tablespoons Made in Napa Valley Mole Simmer Sauce
- 1 15-ounce can black beans
- 3/4 cup pepitas
- 3/4 cup golden raisins
- 1 large avocado diced
Combine rice, chicken stock and 2 tablespoons Mole Simmer Sauce into a sauce pan and cook 20 minutes, or until rice is al dente. Allow rice to cool and combine with remaining mole, black beans, pepitas, raisins and avocado.
