Grilled Shrimp with Mole
Make this when you are craving the rich, bold flavors of mole or are looking for something extra special as a star for a Mexican-inspired meal. The shrimp could be skewered well in advance and the sauce brushed on at the last minute.
Ingredients:
- 4 skewers, soaked in water for 1/2 hour
- 16 large shrimp, de-veined
- Salt and Pepper
- 1 cup Mole Simmer Sauce
Preheat grill. Skewer 4 shrimp onto each stick. Season with salt and pepper, brush with mole mixture and grill to desired doneness, about 2 minutes on each side.
