Fennel, Pear & Gorgonzola Salad

Here is a great salad that can be served as a starter but is also perfect to serve alongside grilled poultry, meat, or fish on a hot summer night. Not only is it filled with all kinds of great flavors, it looks as good as it tastes!

Ingredients:

  • 2 fennel bulbs, shaved thin
  • 2 Bosc pears, peeled, cored, and julienned
  • 1/3 cup dried cranberries
  • 1/3 cup crumbled Gorgonzola cheese
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp Blackberry Balsamic Vinegar with Pear
  • Salt (preferably kosher or sea salt)
  • Freshly ground pepper to taste

In a medium bowl, combine the fennel, pears, cranberries, and Gorgonzola. In a separate bowl whisk together the oil and Blackberry Balsamic Vinegar with Pear. Pour over the fennel mixture, add salt and pepper to taste, and toss gently to combine.
